The “Back 40”: Spring is in the Air

IMG_6527This afternoon, I took a walk out to the “Back 40” with Mr and we were so happy to see blossoms on some of our tree saplings. We had a hard frost this winter that wiped out quite a bit of our front and back lawns. So, the sight of blossoms was really quite encouraging!

Our peach tree looks like it wants to live!! (Can you spot the bee???)

Odie is very excited to see that peaches are blooming! Bees are buzzing all around. This explains why Odie has lumps on his head every Spring!

Figs! I can’t wait to make all sorts of wonderful fig-inspired recipes.

Our apple tree looks like it’s in pretty good shape.

Citrus blossoms.

Odie thinks the citrus tree smells awesome!

In several months, I hope that this post has a wonderful PostScript of amazing fruit from our Back 40! Please send me favorite fig, plum, peach, pomegranate, lime, lemon, grapefruit or apple recipes!

On a sad note… Our grape vines look like they haven’t made a recovery…

  1. My favorite fig jam:
I leave out the sesame seeds. Great with goat cheese on crostini!

My favorite plum cherry jam: This you could serve on old shoes if you needed. Don’t double recipes. They just don’t reach the right consistency if you make too much at once.

Hoping our crops aren’t all eaten by the squirrels this year!

    • I will have to try the fig jam. Sounds yummy! Our crops are in jeopardy with hungry birds! The only thing the birds don’t touch are the lemon and lime trees. Don’t know what would be worse, squirrels or angry/hungry birds?
